    Wash cherries and remove pits. Put in a bowl together with the raisins. Lightly crush cherries. Their skins will pop, but retain the juice. Add brandy to the mixing bowl and toss together the raisins and cherries. Cover and marinate for two hours.

    Preheat oven to 180°C. Grease baking dish or pan. Add a dash of sugar. Spin the dish or pan around so that the insides are well coated. Then set aside.

    Sift flour into mixing bowl and add pinch of salt and the sugar. Whisk in the egg followed by the milk and melted butter until you get a smooth batter. Stir in lemon zest and then add the raisins and cherries to the mix.

    Pour into the prepared baking dish or pan. Bake for about 20 minutes or until it is just set but still a little wobbly. Serve Warm.
