California Raisin And Orange Chocolate Sandwich Cookies

    Preheat the oven to 190°C. Grease two baking sheets and line them with parchment paper.

    Put the raisins in a bowl, pour in the rum and soak for 15 minutes.

    Mix butter and sugar, then beat in the egg yolk.

    Sift flour and salt together into the mixture, then add raisins, chocolate chips and orange zest and stir until thoroughly combined.

    Portion out this dough into 10-gram pieces, then roll each portion into a ball and place them on the prepared baking sheets, spaced well apart. Flatten gently.

    Bake for 10 to 15 minutes, or until light golden brown. Leave them to cool for 10 minutes.

  • 2. Orange Filling

    Sift icing sugar into a bowl, then add butter, orange zest, and rum. Mix until smooth.
