California Raisin And Peach with A Queso De Bola Crumble

    Preheat oven to 190°C.

    To prepare the crumble, combine oatmeal, pistachios, flour, cheese, sugar and salt until well incorporated. Mix in butter and combine well. Chill.

    In a buttered baking dish (or individually buttered dishes), top raisin and peach mixture with prepared crumble, about 75g.

    Bake in oven for about 30 minutes or until bubbly. Serve warm.

  • 2. California Raisin and Peach Filling

    In a skillet, melt butter and sauté peaches, raisins, cardamom, orange zest, water and salt. Simmer for about 5 minutes.

    Combine cornstarch and hot water to form a slurry. Add into peach mixture and boil until the starch is fully cooked. Remove cardamom.
