California Raisin Caramelized Banana Cream Pain Au Lait Braid

    Add all ingredients in a mixing bowl, except for the butter, raisins, walnuts and bananas. Use a dough hook attachment to mix and form a dough.

    Add the butter and mix for 5 minutes. Put the dough in an oiled bowl and cover with plastic to ferment at room temperature for 1 hour.

    Punch down the dough and rest for 5 minutes.

    Roll dough into a 16x10-inch rectangle. Spread the mashed caramelized bananas, raisins and walnuts, and then roll into a log. Cut a slit along the log and twist the log.

    Brush with egg wash and allow to proof for 45 minutes.

    Bake at 200°C for 20 minutes.
