Crème Diplomat with California Raisins

    Preheat oven to 150°C. Grease ramekin or mason jar with butter and sugar. Set aside.

    In a large bowl, mix cream, milk, sugar, scraped vanilla seeds, eggs and rum.

    Arrange bread cubes, California Raisins and candied orange in the ramekin or mason jar. Pour the egg mixture over this. Use the back of a spoon to gently push down the bread cubes, making sure the bread absorbs the egg mixture.

    Bake in a bain-marie or water bath in the oven for about 30 minutes or until a toothpick inserted into it comes out clean. Best served warm.

  • 2. California Raisin and Cream Cheese Filling

    Boil orange peel in water. Replace water when it boils and repeat this for seven times.

    In a saucepan, mix sugar, glucose, water and orange peel. Simmer for 45 minutes without stirring.

    Allow to cool before using.
