  • 1. Tuna Tartar with California Raisins, Sago Relish and 'Bacon,Rum and California Raisin Ice Cream'

    Mix ingredients for tuna tartar in a mixing bowl and set aside.

    Place egg yolk in the mixing bowl. Heat milk until 85°C and pour hot milk mixture slowly onto the egg yolk. Mix well and continue to add in the rest of the ingredients for bacon, rum, and California Raisin ice cream. Place mixture into a Pacojet container and freeze it. Blend ice cream mixture, press mixture evenly in container and place in freezer. After it freezes, blend a second time. Set aside.

    Mix all ingredients for California Raisin and sago relish and set aside.

  • 2. TO ASSEMBLE

    Place tuna tartar in the ring-mould and top with relish. Unmould and place a quenelle of ice cream on top. Garnish with spiced pine nuts, bacon chips and coriander cress.
