Beef Morcon with California Raisins

 ½ cup California Raisins
 1 kg beef sirloin, sliced ¾-inch thick, into two pieces
 4 pieces chicken sausage
 1 hard-boiled egg, quartered
 2 tbsp calamansi or lime juice
 ¼ cup soy sauce
 200 g chopped chicken liver
 1 carrot, cut into strips
 2 tbsp all-purpose flour
 ¼ cup vegetable oil
 2 tbsp Worcestershire sauce
 2 bay leaves
 2 to 3 cups beef broth
 ¼ tsp salt, or to taste
 Freshly ground pepper
 Chopped parsley
 Sweet gherkins, cut into strips
 Cheddar cheese, sliced into strips

Marinate beef in calamansi juice and soy sauce. Spread chicken liver on marinated beef. Arrange marinated beef, California Raisins, strips of chicken sausage, gherkins, hard boiled eggs, cheese and carrots on a sheet of cling wrap.

Roll neatly and tie with a string. Dredge in flour then fry in hot oil. Transfer to a skillet. Add marinade and 1 cup of beef broth. Season with salt and pepper. Cover and simmer until beef is tender. Add more beef broth as necessary. Slice and arrange on a platter. Pour sauce on top and garnish with chopped parsley.
