For 4-6
2 cups all-purpose flour
1 cup sugar
1 ¼ tbsp baking powder
2 cups water
1 cup evaporated milk
1 medium egg
200 g California Raisins
¼ cup unsalted butter, melted
200 g cheddar cheese

Sift together flour, sugar, and baking powder in a bowl. Set aside.

Mix together water, evaporated milk, egg, and butter in another bowl.

Make a well in the center of the dry ingredients and pour in wet ingredients. Mix just until combined. Add the California Raisins and stir lightly.

Spoon batter into the muffin tins until 3/4 full. Steam for 15 minutes.

Grate some cheese on top and steam an additional 1 minute until the cheese is slightly melted.

Remove from steamer and cool.
