EQUIPMENT NEEDED: Cutting board, chef knife, extra-large pot, wooden spoon, can opener, juicer, peeler.
 150 g California Raisins
 785 g Cabbage (1/2 head), sliced and chopped
 140 g Onions, diced
 800 g Tomatoes (1 can)
 10 g Tomatoes (1 can)
 50 g Brown Sugar (Adjust to taste)
 2 Potatoes (Approximately 340 g)
 Black Pepper To taste

Place the cabbage and onions into the pot with water. Bring to a boil.

Add the tomatoes and bring it back to a boil. Add sugar to sweeten the broth, then add in lemon juice gradually to obtain a good balance of sweet and sour.

Once the broth is seasoned, add the California Raisins. Cover with lid and allow it to simmer for about 11/2 hours. Adjust to taste.

Add the potatoes and simmer for 30 minutes. Cook the potatoes until fork tender. Season to taste.

TIPS

Sufficient lemon juice set aside to adjust seasoning as needed.

Serve with a thick slice of sourdough bread.

VARIATIONS

Adding garlic and/or toasted caraway seeds will complement the cabbage flavour well.
